  • 1 Cup Quick Rolled Oats
  • 1/4 Cup Unsweetened Greek Yogurt
  • 2 Tablespoons Chia Seeds

  • 2 Tablespoons Pure Honey
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Salt (about 1/8 teaspoon)
  • 2 Cups Fresh Mango, cubed

Instructions

  1. Mix Base Ingredients: In a medium-sized bowl, combine the coconut milk, rolled oats, unsweetened Greek yogurt, chia seeds, shredded coconut, pure honey, vanilla extract, and a pinch of salt. Stir thoroughly to ensure all ingredients are well incorporated and the oats start absorbing the liquids.
  2. Layer Ingredients in Jars: Take two pint-sized mason jars or similar containers. Begin by placing 1/3 cup of the cubed fresh mango at the bottom of each jar to create a fruity base layer.
  3. Add Oat Mixture Layer: Spoon 1/2 cup of the prepared oatmeal mixture over the mango in each jar. This layering adds texture and flavor contrast between the fruit and oats.
  4. Create Second Mango Layer: Add another layer of cubed mango evenly divided between the jars, followed by adding the remaining oatmeal mixture on top of the mango layer in each jar.
  5. Top with Mango and Refrigerate: Finish by adding the rest of the cubed mango on top of each jar’s mixture. Secure the lids tightly on the jars and place them in the refrigerator to chill and allow the oats and chia seeds to soak and soften overnight.
