Instructions

  1. Prepare ingredients: While waiting for water to boil, grate the parmesan cheese fresh for better melting, measure all dry seasonings into a small bowl, and have spinach and artichokes ready. Cut artichoke hearts into bite-sized pieces if they are large. Soften cream cheese to room temperature for smooth incorporation.
  2. Cook pasta: Bring a large pot of salted water to a boil. Cook the rotini according to package directions until al dente. Reserve 1/2 cup pasta water before draining the pasta. Set drained pasta aside in a large bowl.
  3. Cook spinach: In a medium skillet over medium heat, add spinach with 1 tablespoon of water and cook for about 2 minutes, stirring occasionally until wilted. Transfer spinach to a kitchen towel or paper towels and squeeze firmly to remove as much liquid as possible. Roughly chop the squeezed spinach and set aside.
