For the Spaghetti:
- 1 pound spaghetti
- 4 quarts water
- 2 tablespoons salt, plus more to taste
- 1/4 cup olive oil
- 6 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
For the Garlic Bread:
- 1 loaf Italian bread, about 24 inches long
- 1 cup (2 sticks) unsalted butter, softened
- 8 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder (optional, for extra garlic flavor)
- Salt and freshly ground black pepper to taste
- Boil the Water: In a large pot, bring 4 quarts of water to a rolling boil over high heat. Add 2 tablespoons of salt to properly season the pasta.
- Cook the Spaghetti: Add the spaghetti to the boiling water and stir immediately to prevent sticking. Cook according to package directions, about 8-10 minutes, until al dente. Check a minute early to avoid overcooking.
- Drain the Spaghetti: Drain the cooked spaghetti in a colander, reserving about 1 cup of the starchy pasta water to use later for the sauce.
- Sauté the Garlic: While the spaghetti cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the Spaghetti and Pasta Water: Add the drained spaghetti to the skillet with garlic oil. Toss well to coat, then add about 1/2 cup of reserved pasta water. Toss again, adding more pasta water by tablespoons if the sauce seems dry.
- Season and Finish: Stir in fresh parsley and grated Parmesan cheese. Season with salt and black pepper to taste and toss until cheese is melted and sauce is creamy.
- Prepare the Garlic Butter: In a medium bowl, mix softened butter, minced garlic, parsley, Parmesan, garlic powder (if using), salt, and pepper until smooth and well combined.
- Slice the Bread: Cut the Italian bread lengthwise into two long halves.
- Spread the Garlic Butter: Generously spread the garlic butter mixture evenly over the cut sides of both bread halves.
- Preheat the Oven: Preheat oven to 375°F (190°C).
- Bake the Garlic Bread: Place bread halves cut-side up on a baking sheet. Bake for 10-12 minutes until golden brown and the butter is melted and bubbly.
- Broil for Crispy Finish (Optional): For extra crispness, broil the bread for an additional 1-2 minutes, watching carefully to prevent burning.
- Slice and Serve: Remove from oven, let cool slightly, then slice into pieces. Serve warm alongside the spaghetti.
- Plate the Spaghetti: Divide spaghetti among plates and garnish with extra Parmesan and parsley if desired. Serve immediately with garlic bread.
Notes
- Spice it Up: Add more red pepper flakes or a pinch of cayenne for extra heat.
- Add Vegetables: Incorporate sautéed mushrooms, spinach, or cherry tomatoes into the spaghetti for more flavor and nutrition.
- Use Different Herbs: Try oregano, basil, or thyme in the garlic butter for varied flavor profiles.
- Cheese Variations: Substitute mozzarella, provolone, or Asiago cheese in the garlic bread for a different cheesy twist.
- Make it Ahead: Prepare garlic butter up to 3 days in advance and refrigerate, bringing to room temperature before spreading.
- Garlic Bread Alternative: Cook garlic bread in a skillet by melting butter and toasting bread halves until crispy if you don’t want to use an oven.
