Crust
- 7 whole graham crackers (equals 1 cup, finely crushed)
- 1/4 cup (28g) powdered sugar
- 6 Tbsp (86g) unsalted butter, melted
Filling
- 2 milk chocolate candy bars (1.55 oz each), divided into rectangles
- 12 large marshmallows, cut in half
- Preheat Oven: Preheat your oven to 350°F to prepare for baking the s’mores bites.
- Crush Graham Crackers: Finely crush the graham crackers into crumbs using a food processor, slap chop, or by placing them in a plastic bag and smashing thoroughly.
- Make Crust Mixture: Combine the crushed graham crackers, powdered sugar, and melted butter in a small bowl until evenly mixed.
- Form Crust Cups: Lightly grease a 24-cup mini muffin pan. Evenly divide the crumb mixture into each cup and press down firmly to form shallow crust cups.
- Bake Crust: Bake the crust cups for 4-5 minutes, or until the edges turn golden brown. Remove from oven after baking.
- Prepare Chocolate and Marshmallows: While baking, break the chocolate bars into rectangles as per the divisions on the bars. Cut each large marshmallow in half using scissors dipped in cold water to prevent sticking.
- Add Chocolate: Place one chocolate rectangle into each baked crust cup in the muffin pan.
- Add Marshmallows: Place one marshmallow half cut-side down on top of each piece of chocolate in the cups.
- Bake Again: Return the muffin pan to the oven and bake for 2-4 minutes, just until marshmallows start to soften.
- Broil for Browning: If desired, turn the oven to broil and broil the s’mores bites for 1-2 minutes to brown the tops gently. Watch carefully to avoid burning.
- Cool and Serve: Remove the pan from the oven and place it on a cooling rack. Let the s’mores bites cool for 15 minutes before carefully removing them from the pan and serving.
Notes
- Use scissors dipped in cold water to easily cut marshmallows without sticking.
- Broiling is optional but recommended for a toasted marshmallow top.
- Ensure to press crumbs firmly to create a sturdy crust cup.
