Perfect for busy days, it’s served best over hot rice or noodles and allows the robust flavors to meld beautifully over several hours.

Ingredients

Scale

Beef and Vegetables

  • 2 pounds beef sirloin, cut into strips or chunks
  • 1 onion, diced or sliced
  • 3 bell peppers, sliced (any color combination)

Sauce

  • 3 cloves garlic, minced
  • 3/4 cup beef broth
  • 3 beef bouillon cubes, crumbled
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tsp Worcestershire sauce
  • 1 tsp ground ginger or fresh grated ginger
  • Salt and pepper to taste
  • 2 tbsp cornstarch, plus extra if needed for thickening

Instructions

  1. Prepare the Slow Cooker: Place the beef strips at the bottom of your slow cooker. Top evenly with diced onion and sliced bell peppers, nestling them around the beef to ensure even cooking.
  2. Make the Sauce: In a separate bowl, whisk together minced garlic, beef broth, crumbled beef bouillon cubes, soy sauce, Worcestershire sauce, honey, ground or fresh ginger, cornstarch, and a pinch of salt and pepper until the mixture is smooth and well combined.
  3. Combine and Cook: Pour the prepared sauce mixture evenly over the beef and vegetables in the slow cooker. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours until the beef is tender and the flavors have melded together beautifully.
  4. Thicken the Sauce (Optional): If the sauce requires thickening after cooking, mix a small amount of extra cornstarch with cold water to form a slurry. Stir it into the slow cooker, then cook uncovered for an additional 10 to 15 minutes until the sauce thickens to your desired consistency.
  5. Serve: Serve the warm pepper steak over steamed hot rice or noodles. Enjoy the cozy, savory flavors of this effortless slow-cooker meal!

Notes

  • Leftovers store well in the refrigerator for a couple of days and taste even better after the flavors develop.
  • Consider garnishing with fresh green onions or serving alongside additional steamed or sautéed vegetables for extra nutrition and flavor.
