  • 3 tablespoons vanilla protein powder

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside to prevent sticking and make cleanup easier.
  2. Slice the apples: Wash and slice your apples into about 6 round slices each, or to your preferred thickness. Using a knife or small circle cutter, carefully cut a small circle out of the center of each apple slice to mimic the ring shape.
  3. Make the almond butter mixture: In a bowl, whisk together the almond butter, maple syrup, and vanilla extract until smooth. Then stir in the shredded coconut, vanilla protein powder, and a pinch of salt until everything is well combined into a thick, scoopable mixture.
  4. Assemble apple slices: Evenly scoop the almond butter mixture onto each apple round, spreading or pinching it to cover the slices nicely. Arrange them on the prepared baking sheet.
  5. Chill the slices: Place the tray of topped apple slices in the fridge to set while you prepare the chocolate drizzle.
  6. Melt the chocolate: In a microwave-safe bowl, melt the non-dairy chocolate chips by microwaving in 20-30 second intervals, stirring in between until the chocolate is completely smooth and melted.
