Instructions

  1. Prepare the Cake: Follow the instructions on the red velvet cake mix box to prepare the batter using water, oil, and eggs. Pour the batter into a 9×13 inch pan and bake as directed. Allow the cake to cool completely before proceeding.
  2. Form the Truffle Dough: Remove and discard the crisp outer edges of the cooled cake. Crumble the remaining cake into a large mixing bowl. Add the softened cream cheese and mix thoroughly (using your hands is easiest) until a uniform dough forms.
  3. Shape the Truffles: Scoop about 2 tablespoons of the cake mixture per truffle and form into balls. Place the balls onto a parchment paper-lined baking sheet. Freeze for 30 minutes or until the truffles are firm enough to dip.
  4. Melt the Coating: In a microwave-safe bowl, melt the almond bark or white chocolate candy melts by heating in 30-second intervals, stirring between each until fully melted and smooth.
  5. Dip the Truffles: Dip each chilled cake ball into the melted white chocolate, allowing any excess coating to drip off. Return the coated truffles to the parchment-lined baking sheet. Optionally, drizzle with additional white chocolate and decorate with festive sprinkles or extra cake crumbs.
