Instructions

  1. Melt Butter and Marshmallows: In a large pot over medium heat, melt 6 tablespoons of salted butter. Add 15 ounces of mini marshmallows (reserving 1 cup for later) and stir continuously until completely smooth and combined. Remove from heat once melted.
  2. Add Pudding Mix and Vanilla: To the melted mixture, stir in the 3.5 ounce box of instant pistachio pudding mix and 1 teaspoon of pure vanilla extract, folding gently with a spatula until blended evenly.
  3. Mix in Cereal and Remaining Marshmallows: Add all 6 cups of rice krispies cereal along with the remaining 1 cup of mini marshmallows. Mix thoroughly until all the cereal and marshmallows are coated completely with the pistachio mixture.
  4. Press Into Pan and Cool: Pour the combined mixture into a 9-inch square baking dish lined with parchment paper. Press firmly and evenly. Let the treats cool and set at room temperature for at least one hour.
  5. Cut and Drizzle with Chocolate: After setting, remove the treats from the pan and parchment paper. Cut into 16 equal squares. Using a fork dipped in the melted dark chocolate, drizzle the chocolate evenly over each bar. Allow the chocolate to set for about 15 minutes before serving.
