Ingredients

Scale

Cookie Dough

  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup soft butter
  • ½ cup peanut butter
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Filling and Topping

  • 10 oz mini-sized Snickers candy bars (about 30 mini bars)
  • ¼ cup semi-sweet chocolate chips

Instructions

  1. Cream the Wet Ingredients: In a large bowl, cream together the butter, sugar, brown sugar, and peanut butter until smooth and fluffy. Beat in the vanilla extract and egg until well combined.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the peanut butter mixture, stirring just until blended; avoid overmixing.
  3. Wrap Each Candy Bar: Take a small amount of dough and shape it around each mini Snickers candy bar completely so that the candy is fully enclosed. Place the wrapped candies onto silpat lined or well-greased cookie sheets, spacing them to allow for spreading.
  4. Bake the Cookies: Preheat the oven to 350°F (175°C). Bake the cookie-wrapped candy bars for about 12 minutes or until the cookies are slightly golden around the edges.
  5. Cool the Cookies: Remove the cookies from the oven and allow them to cool on the baking sheet for 2-3 minutes before transferring them carefully to cooling racks to cool completely.
  6. Drizzle with Melted Chocolate: Melt the semi-sweet chocolate chips in the microwave at half power, stirring every 15-20 seconds until smooth. Transfer the melted chocolate to a ziplock bag, snip off a tiny corner, and drizzle the chocolate over the cooled cookies for an elegant finish.

Notes

  • The original recipe calls for creamy peanut butter, but crunchy peanut butter works just as well and adds texture.
  • Ensure the candy bar is fully covered in dough to prevent the candy from melting out and making a mess during baking.
  • The chocolate drizzle is optional but adds extra flavor and a beautiful presentation.
  • Makes approximately 30 cookies; you can adjust the dough amount slightly to make smaller or larger cookies.
