Ingredients

Scale

Marinade

  • ⅓ cup fresh cranberries
  • 2 tablespoons olive oil (or avocado oil)
  • 2 tablespoons coconut aminos (or soy sauce)
  • 2 tablespoons maple syrup
  • 3 cloves garlic
  • 1 teaspoon fresh rosemary leaves
  • ¼ cup dry white wine (or chicken broth)

Chicken

  • 6 medium bone-in, skin-on chicken thighs (approximately 3 pounds)
  • 1 tablespoon olive oil (or avocado oil)
  • Salt to taste

For Baking and Garnish

  • ½ cup fresh cranberries
  • 4 sprigs fresh rosemary
  • 1 tablespoon maple syrup
  • Sprigs of fresh rosemary (for garnish, optional)

Instructions

  1. Prepare the Cranberry Rosemary Marinade: Add ⅓ cup fresh cranberries, 2 tablespoons olive oil, 2 tablespoons coconut aminos, 2 tablespoons maple syrup, 3 cloves garlic, 1 teaspoon fresh rosemary leaves, and ¼ cup dry white wine to a food processor or standard blender. Blend or pulse until the mixture is completely smooth, forming your marinade.
  2. Marinate the Chicken Thighs: Arrange 6 medium bone-in, skin-on chicken thighs skin-side up in a single layer inside a baking dish. Pour the cranberry rosemary marinade evenly over the chicken, ensuring each piece is well coated. Cover the dish with a lid or plastic wrap and refrigerate for at least 30 minutes and up to 24 hours.
  3. Bring Chicken to Room Temperature: Remove the baking dish from the refrigerator and let it stand covered at room temperature for 30 minutes before cooking to ensure even cooking.
  4. Preheat Oven and Prepare Chicken for Baking: Preheat your oven to 375º Fahrenheit. Uncover the baking dish and, using a spoon or spatula, gently scrape any marinade from the tops of the chicken thighs into the dish without disturbing the skin.
  5. Season and Add Fresh Ingredients: Brush 1 tablespoon olive oil evenly over the tops of the chicken thighs, season generously with salt to taste, then sprinkle ½ cup fresh cranberries and 4 sprigs fresh rosemary into the marinade surrounding the chicken in the baking dish.
  6. Bake the Chicken: Place the prepared baking dish in the preheated oven and bake uncovered for 20 minutes. Afterward, begin checking the internal temperature of the chicken using a meat thermometer. Continue baking, checking every few minutes, until the chicken reaches an internal temperature of 160º Fahrenheit.
  7. Prepare for Broiling: Once the chicken reaches 160º Fahrenheit, remove the baking dish from the oven. Preheat the broiler on High. While the broiler heats, remove the rosemary sprigs from the baking dish and discard.
  8. Broil for Crispy Skin: Brush 1 tablespoon maple syrup over the tops of the chicken thighs. Place the baking dish under the preheated broiler and broil carefully until the skin crisps and browns but does not burn. Keep a close eye during this step to prevent burning.
  9. Rest and Finish: Remove the baking dish from the oven. Immediately spoon the cranberries and marinade from the baking dish over the tops of the chicken thighs, covering them completely. Let the chicken rest for 3 to 5 minutes as the internal temperature rises to 165º Fahrenheit.
  10. Serve: Transfer the rested chicken thighs to plates. Spoon any remaining cranberries and marinade over the top. Garnish with fresh rosemary sprigs if desired and serve hot for a delicious, comforting meal.

Notes

  • Marinate chicken for at least 30 minutes but no more than 24 hours to prevent overly strong flavors and maintain chicken texture.
  • Using skin-on, bone-in chicken thighs keeps the meat juicy and flavorful.
  • When broiling, watch the chicken closely to avoid burning the maple syrup glaze.
  • Internal cooking temperature for chicken thighs should reach at least 165º Fahrenheit for safety; rest time helps reach this final temperature.
  • Dry white wine can be substituted with chicken broth for a non-alcoholic version.
  • The cranberries add a fresh tartness balanced by the sweet maple syrup and aromatic rosemary for a unique flavor profile.
