Main Ingredients

  • 1/2 bag frozen fries (approximately 1012 oz)
  • Cheddar cheese or American cheese slices (about 1 cup shredded or 4 slices)
  • 2 onions, diced
  • 2 tbsp butter
  • 1 tbsp neutral oil (such as vegetable or canola oil)
  • 1/2 tsp salt

Instructions

  1. Caramelize the onions: Melt the butter in a pan over medium-low heat and add the neutral oil. Add the diced onions and sprinkle with salt. Stir occasionally and cook gently for at least 30 minutes until the onions turn golden and caramelize, making sure not to let them burn by adjusting the heat as necessary.
  2. Prepare the special sauce: In a bowl, mix together the mayonnaise, ketchup, rice or white vinegar, sweet relish, sugar, and optional chili flakes until well combined. Set aside.
  3. Cook the fries: Bake or fry the frozen fries according to the package instructions until golden and crispy.
  4. Melt the cheese on fries: Once the fries are cooked, transfer them to an oven-safe dish. Top evenly with shredded cheddar cheese or lay American cheese slices on top. Place under the broiler for 3 to 5 minutes until the cheese is melted and bubbly.
