Instructions

  2. Make Crust: Pulse about 10 to 11 Oreo cookies in a food processor until fine crumbs form. Then add the melted butter and pulse until the mixture is evenly combined and resembles wet sand.
  3. Form Crust Bases: Divide the Oreo crumb mixture evenly among the lined muffin cups, pressing firmly to create an even crust base in each liner.
  4. Prepare Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar together until completely smooth and creamy. Then add the eggs one at a time, beating until fully incorporated. Stir in the vanilla extract. Add neon green food coloring a few drops at a time, mixing until you achieve a bright Grinchy green color.
