Ingredients

Scale

Main Ingredients

  • 2430 ladyfingers (depending on your dish size)
  • 16 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Fruit and Syrup

  • 2½ cups fresh raspberries, divided
  • ½ cup raspberry jam
  • ¼ cup water

Garnish (Optional)

  • Fresh mint leaves
  • Powdered sugar

Instructions

  1. Make the Raspberry Syrup: In a small saucepan, combine the raspberry jam and water, and heat over low heat until the jam dissolves and forms a smooth syrup. Remove from heat and let it cool completely.
  2. Prepare the Creamy Filling: In a mixing bowl, use a hand mixer or stand mixer to beat together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until the mixture is smooth, thick, and fluffy.
  3. Soak the Ladyfingers: Quickly dip each ladyfinger into the cooled raspberry syrup, being careful not to soak them too long to prevent sogginess. Arrange them in a single, even layer in your serving dish or trifle bowl.
  4. Layer the Tiramisu: Spread half of the mascarpone cream mixture evenly over the soaked ladyfingers. Sprinkle a layer of fresh raspberries on top. Repeat with another layer of soaked ladyfingers, mascarpone cream, and fresh raspberries.
  5. Chill and Garnish: Cover the dish with plastic wrap and refrigerate for at least 4-6 hours or preferably overnight to allow flavors to meld and the dessert to set. Before serving, dust with powdered sugar and garnish with fresh mint leaves and a few extra raspberries.

Notes

  • Choose ripe, juicy raspberries for the best fresh flavor.
  • Dip ladyfingers quickly into syrup to avoid sogginess.
  • Chilling overnight enhances the flavor and texture.
  • Use high-quality mascarpone for a richer cream.
  • Gluten-free option: substitute ladyfingers with gluten-free varieties.
  • Dairy-free option: use plant-based cream cheese and coconut cream.
  • For an adult twist, add raspberry liqueur to the syrup.
  • Store leftovers covered in the refrigerator for up to 3 days.
