Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and brown sugar. Set aside.
  2. Combine wet ingredients: In a separate bowl, whisk together the milk, melted and cooled butter, pumpkin puree, eggs, and vanilla extract until fully combined.
  3. Combine wet and dry: Pour the wet mixture over the dry ingredients and gently stir until just combined. Do not overmix — stop when the flour disappears for the fluffiest pancakes.
  4. Prepare griddle: Heat a griddle or skillet over medium heat and lightly butter the surface.
  5. Cook pancakes: For each pancake, pour about 1/3 cup batter onto the griddle and gently spread slightly. Cook for 2-4 minutes until bubbles form and the edges look set, then flip and cook another 2-4 minutes until golden brown.
