Ingredients

Scale

Chicken and Seasonings

  • 12 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large breasts)

Sauce

  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (preferably low or no sodium)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (preferably low or no sodium)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or favorite Italian dressing mix)

Other

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley (optional, for serving)
  • Cracked black pepper (optional, for serving)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Sear Chicken: Heat a cast iron skillet over medium-high heat, add 1-2 tablespoons vegetable oil and swirl to coat. Season chicken breasts on both sides with salt and pepper. Once the pan is hot, sear chicken breasts for 2-3 minutes per side until golden brown. Remove from heat.
  2. Prepare Sauce: In a medium bowl, whisk together the softened cream cheese and softened unsalted butter until smooth.
  3. Combine Sauce Ingredients: Add the cream of chicken soup, minced garlic, chicken broth, and Italian dressing mix to the cream cheese mixture. Whisk until completely combined.
  4. Prepare Crock Pot: Spray the inside of the crock pot with non-stick cooking spray. Place the seared chicken breasts at the bottom.
  5. Add Sauce and Cook: Pour the sauce mixture evenly over the chicken breasts. Cover and cook on low for 3-4 hours or until the chicken reaches an internal temperature of 165°F. Longer cooking will make chicken more tender and can cause it to fall apart.
  6. Cook Pasta: Shortly before serving, prepare the angel hair pasta according to package directions until al dente, then drain.
  7. Serve: Serve the chicken whole or shredded. You can either toss the cooked pasta into the sauce or spoon the chicken and sauce over individual pasta servings. Garnish optionally with fresh parsley, cracked black pepper, and grated Parmesan cheese.

Notes

  • Use low or no sodium soup and broth if trying to reduce salt.
  • Always check chicken’s internal temperature with a thermometer to ensure it reaches 165°F for safety.
  • Cooking times can vary based on crock pot brand and chicken breast size.
  • For a creamier sauce, you can shred or break up the chicken inside the crock pot before serving.
  • Angel hair pasta cooks quickly; watch carefully to avoid overcooking.
  • Optional toppings like parsley, black pepper, and Parmesan add freshness and extra flavor.
