Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Add-ins

  • ½ cup finely chopped vegetables (bell peppers, spinach, mushrooms)
  • ½ cup cooked turkey bacon or chicken sausage (optional)

Instructions

  1. Preheat the Oven: Set your oven to 325°F (163°C) to ensure it reaches the perfect temperature while you prepare your egg mixture.
  2. Prepare the Muffin Tin: Grease a muffin tin thoroughly or use a silicone muffin tray to prevent the egg bites from sticking.
  3. Blend Ingredients: In a blender, combine the eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder. Blend until the mixture is smooth and creamy, which will help create a light and fluffy texture.
  4. Mix in Add-ins: Pour the blended egg mixture into a bowl. Gently fold in the finely chopped vegetables and cooked turkey bacon or chicken sausage if using, distributing them evenly.
  5. Fill the Muffin Cups: Divide the mixture evenly into 12 muffin cups, filling each about three-quarters full to allow space for rise while baking.
  6. Bake: Place the muffin tin in the oven and bake for 20 to 25 minutes, until the egg bites are set and slightly golden on top.
  7. Cool and Remove: Let the egg bites rest for 5 minutes after baking to firm up, then carefully remove them from the tin.
  8. Serve or Store: Enjoy the egg bites warm, or store them in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.

Notes

  • Feel free to customize the vegetables and meats based on preference or dietary restrictions.
  • For a vegetarian version, omit the turkey bacon or sausage.
  • Using a blender ensures a smooth texture, but you can whisk the ingredients by hand if preferred.
  • Silicone muffin cups are easier for removal and cleanup.
  • Reheat in the microwave for about 30 seconds or until warm before serving.
