Ingredients

Scale

Sauce Ingredients

  • 1/2 cup milk (any kind)
  • 1 1/4 cups cottage cheese (Good Culture whole milk recommended, but any percentage works)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 cup freshly grated parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Kosher salt and fresh cracked black pepper to taste
  • 1/2 cup pasta cooking water (as needed)

Pasta

  • 12 ounces pasta of choice

Instructions

  1. Blend Cottage Cheese and Milk: In a high-speed blender, combine the cottage cheese and milk, blending until the mixture is completely smooth to create the base for your sauce.
  2. Sauté Garlic: Heat olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, taking care not to burn it.
  3. Combine Ingredients and Melt Cheese: Reduce heat to low and pour the blended cottage cheese mixture into the pan. Add the freshly grated parmesan cheese and Italian seasoning. Stir gently to combine and melt the parmesan, cooking on very low heat to avoid curdling the sauce.
  4. Cook Pasta: Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta. Rinse the noodles briefly with cool water to stop cooking.
  5. Mix Pasta and Sauce: Return the pasta to the saucepan with the Alfredo sauce. Toss over low heat, adding reserved pasta water as needed to reach desired consistency. Heat carefully to avoid overheating and causing the sauce to separate, then season with kosher salt and fresh cracked black pepper to taste. Serve immediately.

Notes

  • Use whole milk cottage cheese for a creamier texture, but you can substitute with part-skim if preferred.
  • Be careful when heating the sauce; high heat can cause the cheese to curdle or separate.
  • Reserving pasta cooking water is essential to adjusting the sauce consistency and helping it cling to the pasta.
  • Rinsing the noodles briefly stops the cooking process, keeping them al dente.
  • Feel free to add fresh parsley or crushed red pepper flakes for an extra flavor boost.
