5 from 73 reviews

These Chicken Bombs are a deliciously cheesy and spicy appetizer made by stuffing refrigerator biscuits with a mixture of shredded chicken, ranch dressing, cream cheese, cheddar cheese, and buffalo sauce. They are baked or air fried until golden brown, creating a crispy outer layer with a creamy, flavorful filling. Perfect for game day snacks or casual get-togethers.

Ingredients

Scale

Filling

  • 1 cup shredded chicken
  • ¼ cup ranch dressing
  • 4 oz cream cheese
  • ½ cup shredded cheddar cheese
  • ½ cup Frank’s RedHot Buffalo Wings Sauce
  • 2 tablespoons diced jalapeños (optional)

Dough & Topping

  • 16 refrigerator biscuits (from 2 containers, 10 biscuits each, use 16 total)
  • ¼ cup butter, melted
  • ½ teaspoon garlic powder
  • 2 tablespoons shredded parmesan cheese
  • ½ teaspoon dried parsley

Instructions

  1. Prepare the filling: In a mixing bowl, combine the shredded chicken, ranch dressing, cream cheese, shredded cheddar cheese, Frank’s RedHot Buffalo Wings Sauce, and diced jalapeños (if using). Mix until all ingredients are fully incorporated.
  2. Stuff the biscuits: Flatten each biscuit dough piece slightly. Place a spoonful of the chicken filling in the center of each biscuit and carefully wrap the dough around the filling, sealing it completely to form a ball.
  3. Prepare topping mixture: In a small bowl, combine the melted butter and garlic powder.
  4. Brush and coat: Place the stuffed biscuit balls on a baking sheet. Brush the tops with the melted butter and garlic powder mixture, then sprinkle with shredded parmesan cheese and dried parsley for added flavor and color.
  5. Bake the bombs: Preheat your oven to 350°F (175°C). Bake the stuffed biscuit balls for 25-30 minutes, or until they are golden brown on top and cooked through.
  6. Alternatively, air fry: Place the stuffed biscuits directly on the air fryer rack. Air fry at 350°F for 5-6 minutes, or until they are golden brown and cooked through.
  7. Serve: Remove from oven or air fryer, let cool slightly, and serve warm as a flavorful appetizer or snack.

Notes

  • Feel free to adjust the amount of buffalo sauce for desired heat level.
  • Diced jalapeños are optional but add a nice extra kick.
  • Use refrigerated biscuit dough for the easiest preparation, but homemade biscuit dough can be used for a fresher taste.
  • Leftover Chicken Bombs can be reheated in an oven or air fryer to maintain crispiness.
  • Can be served with extra ranch or blue cheese dressing for dipping.
