Instructions

  1. Prepare the avocado spread: In a small bowl, mash the ripe avocado thoroughly with lemon juice, and season with salt and pepper to taste. This creamy spread adds a fresh and tangy flavor to the sandwich.
  2. Assemble the sandwich: If using, spread mayonnaise or aioli on one side of each bread slice. On the un-mayo side of one slice, spread the avocado mixture evenly. Then layer the shredded chicken over the avocado, followed by the slices of cheddar or Monterey Jack cheese. Add any optional add-ins like tomato, red onion, or bacon if desired. Top with the second bread slice, mayo side facing outwards.
  3. Toast the sandwich: Heat butter in a skillet over medium heat until melted and sizzling. Place the assembled sandwich onto the skillet and grill for approximately 3 to 4 minutes on each side, pressing gently with a spatula to ensure even browning and melting of the cheese. The bread should be golden and crispy.
