Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the Chicken: Season the chicken breasts with salt and pepper on both sides to enhance their flavor before cooking.
  2. Cook the Chicken: Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side, until fully cooked through and no longer pink inside. Remove the chicken and let it rest to retain juices, then slice thinly for the sandwich.
  3. Prepare Fillings: Slice the avocado, cheese, red onion, and tomato. These fresh ingredients will add creaminess and crunch to your sandwich.
  4. Assemble the Sandwich: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread. On two slices, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo side down.
  5. Grill the Sandwich: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the pan and cook for 3-4 minutes per side until the bread is golden brown and the cheese is melted. Press gently with a spatula to help the cheese melt evenly.
  6. Serve: Remove the sandwiches from the skillet and let them cool for a minute before slicing in half. Serve warm for the best taste experience.

Notes

  • To keep the avocado fresh and prevent browning, you can spread a little lemon juice on the slices before assembling the sandwich.
  • If you prefer a spicier kick, add some sliced jalapeños or a dash of hot sauce.
  • This sandwich can easily be adapted to gluten-free bread to accommodate gluten sensitivities.
  • Use leftover grilled chicken or rotisserie chicken to save time.
  • For a vegetarian version, substitute chicken with grilled portobello mushrooms or tofu slices.
