Ingredients

Scale

Muffin Batter

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)

Cobbler Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners to prevent sticking and for easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, whisk together the 1 3/4 cups flour, granulated sugar, baking powder, and salt, ensuring all dry ingredients are evenly combined for consistent texture.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth to create a homogenous liquid base for the batter.
  4. Assemble the Batter: Pour the wet mixture into the dry ingredients. Stir gently until just combined; avoid overmixing to keep muffins tender. Fold in the pitted cherries evenly to distribute fruit throughout the batter.
  5. Prepare the Cobbler Topping: In a small bowl, combine the 1/2 cup flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs, forming the cobbler topping.
  6. Fill & Top Muffins: Spoon the batter into the prepared muffin cups, filling each about two-thirds full. Evenly sprinkle the cobbler topping over each muffin to add a sweet, crunchy finish.
  7. Bake: Bake for 20 to 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean, indicating doneness.
  8. Cool & Serve: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely, which helps maintain texture and prevents sogginess.

Notes

  • Fresh cherries provide the best flavor, but frozen cherries can be used if thawed and well-drained to prevent excess moisture.
  • Do not overmix the batter, as this can make the muffins tough.
  • The cobbler topping can be made ahead and refrigerated before using for convenience.
  • For a dairy-free option, substitute milk with almond or oat milk and use a dairy-free butter alternative.
  • These muffins are best enjoyed the day they are made but can be stored in an airtight container for up to 2 days.
