Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Make Cheese Crust: Spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar cheese evenly on the prepared pan, forming a large circle approximately 10–12 inches in diameter. This will serve as the pizza crust.
  3. Bake Cheese Base: Bake the cheese crust in the preheated oven for 8–10 minutes, until the cheese is melted, bubbly, and lightly golden brown. Remove from the oven carefully.
  4. Add Toppings: Crack the 4 eggs directly onto the cheese base, spacing them evenly. Sprinkle the cooked and crumbled breakfast sausage, diced red onion if using, and the extra 1 cup mozzarella and ½ cup cheddar cheese over the top.
