Deliciously decadent Brownie Cheesecake Bars combine rich, fudgy brownies with a creamy cheesecake layer, topped with chocolate ganache and crunchy Oreos for a perfect indulgent dessert.

Ingredients

Scale

Brownie Base

  • 1 box brownie mix (for 9x13 inch pan)
  • 11 Oreos, chopped (half of 22 Oreos)

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 2 tablespoons sour cream

Ganache and Topping

  • 1/4 cup chocolate chips
  • 1/4 cup heavy whipping cream
  • 11 Oreos, chopped (remaining half)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to the temperature specified on the brownie mix box, typically 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or spray with cooking spray for easier cleanup.
  2. Make Brownie Batter: Prepare the brownie mix according to the package directions. Pour the batter into the prepared pan, spreading it evenly.
  3. Add Oreos to Brownie Layer: Press half of the chopped Oreos (about 11 pieces) evenly into the brownie batter to add crunchy texture.
  4. Partially Bake Brownies: Bake the brownie layer until the top is set but still soft—this usually takes about 20 minutes. Since this is a partial bake, the brownies will finish baking later with the cheesecake layer. Let cool slightly.
  5. Prepare Cheesecake Mixture: In a large bowl, beat the softened cream cheese until smooth using a hand or stand mixer. Add the granulated sugar, egg, and vanilla extract, mixing until well combined. Stir in the sour cream until the filling is creamy and lump-free.
  6. Assemble Cheesecake Layer: Pour the cheesecake mixture over the slightly cooled brownie base and spread evenly with a spatula.
  7. Bake Combined Layers: Return the pan to the oven and bake for 25 to 30 minutes, or until the cheesecake layer is just set. The edges should look firm and the center should have a slight jiggle when you gently shake the pan.
  8. Cool and Chill: Let the bars cool at room temperature for about 30 minutes, then chill in the refrigerator for at least 1 hour to set completely.
  9. Make Chocolate Ganache: In a small saucepan or microwave-safe bowl, heat the chocolate chips and heavy whipping cream together until warm. Stir continuously until the mixture is smooth and glossy.
  10. Top with Ganache and Oreos: Spread the ganache evenly over the chilled cheesecake layer. Sprinkle the remaining chopped Oreos (about 11 pieces) on top, gently pressing them into the ganache so they adhere.
  11. Final Chill: Chill the assembled bars for at least 2 hours or, for best results, overnight to allow the ganache to fully set. Serve chilled and enjoy your rich, layered Brownie Cheesecake Bars!

Notes

  • For easier slicing, chill the bars thoroughly before cutting.
  • You can use homemade brownie batter if preferred.
  • Sour cream adds moisture and tanginess to the cheesecake layer, enhancing flavor.
  • Adjust baking times depending on your oven and brownie mix instructions.
  • Store leftovers in the refrigerator for up to 4 days, or freeze for longer storage.
