Instructions

  1. Prepare the Dough: In a large bowl, combine the warm milk, castor sugar, and instant yeast. Allow the mixture to sit until foamy, about 5 minutes, indicating the yeast is active. Stir in the vegetable oil and mashed bananas until combined. Add 4 cups (approximately 480 g) of flour and stir until combined; the dough will be sticky, which is expected. Cover with a dish towel and set in a warm place for 1 hour to rise.
  2. Finish the Dough: After 1 hour, the dough should be very puffy and at least doubled in size. Stir in the remaining 1 cup (approximately 120 g) of flour, baking powder, and salt until fully combined to form a dough.
  3. Make the Cinnamon Butter Filling: Brown the butter by melting it in a pan until it develops a nutty aroma and golden color. Allow it to cool to room temperature. Once cooled, mix in the brown sugar and cinnamon powder. Slice the bananas and set aside for layering.
  4. Prepare the Banana Bread Batter: In a blender, combine the mashed banana, egg, yogurt, melted butter, oil, brown sugar, and vanilla extract. Blend until smooth. Alternatively, mash the banana thoroughly and whisk all ingredients in a bowl. Add the flour, baking powder, and a pinch of salt, and whisk until the batter is smooth and well combined.
