- Activate Yeast: Heat the water to between 105°F and 115°F. Add a pinch of sugar and the yeast. Stir briefly and then set aside for about 5 minutes until the yeast is activated and foamy.

- Prepare Dough: In a stand mixer with dough hook, combine warm apple cider, melted butter, beaten eggs, sugar, and the activated yeast mixture. Add flour, cinnamon, and salt. Mix until dough forms, adding more flour if sticky.

- Knead Dough: Mix on low speed for 5 minutes or until dough is soft and stretchy. Remove and knead lightly on a floured surface to form a smooth ball.

- First Rise: Place dough in a greased bowl, lightly oil the top, cover with cling film or towel, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.

- Make Apple Filling: Melt butter in saucepan over medium heat. Add diced apples, apple cider, and lemon juice. Cook 3-4 minutes until apples soften.

- Thicken Apple Filling: In a bowl, mix brown sugar, cornstarch, cinnamon, and salt. Stir into apples and cook until thickened. Remove from heat and cool completely.

- Prepare Cinnamon Filling: Mix softened butter, brown sugar, and cinnamon until well combined using a spatula.

- Shape Rolls: Punch down risen dough and roll out on floured surface into 18” x 10” rectangle. Spread cinnamon filling evenly, then spoon apple filling over it and spread gently.

- Roll and Cut: Starting from the long side, roll the dough tightly into a log. Slice into 12 even pieces with a sharp knife.

- Second Rise: Place rolls in a greased 9”x13” baking pan, cover with a towel, and allow to rise for 30 minutes or until doubled.

- Make Browned Butter: Melt butter over medium heat until it foams and milk solids brown (4-5 minutes). Remove from heat and cool until soft butter consistency.

- Make Icing: In a mixer, beat browned butter with softened cream cheese until creamy. Gradually add icing sugar and beat to combine.

- Bake Rolls: Preheat oven to 350°F. Bake rolls 25-35 minutes until golden brown and cooked through. Cool slightly before icing.

- Ice Rolls: Spread browned butter icing generously over the warm rolls. Serve and enjoy!

		Notes

- Ensure water temperature for yeast activation is between 105°F and 115°F to avoid killing the yeast.

- Add flour gradually to dough to prevent over-drying the dough.

- The apple filling should be cooled before spreading to avoid making the dough soggy.

- Browned butter adds a rich, nutty flavor to the icing; do not skip this step for full flavor.

- If you prefer, substitute apple cider with apple juice but cider adds more depth.
