5.1 from 19 reviews

Deliciously moist and flavorful Apple Blondies combine the rich sweetness of brown and white sugar with tender chunks of tart apples and a hint of cinnamon, creating a perfect treat that’s great for dessert or snacking. These blondies have a dense, chewy texture similar to brownies but with a fruity twist and optional crunchy walnuts for extra texture.

Ingredients

Scale

Blondie Batter

  • 3/4 cup butter, melted
  • 1 1/2 cup packed brown sugar
  • 1 1/2 cup white sugar
  • 3 large eggs
  • 3 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 3 teaspoon baking powder
  • 3 cups all-purpose flour
  • 3 cups apples, diced (preferably tart baking apples like Granny Smith)
  • 1 cup chopped walnuts (optional)

Topping

  • 1 Tablespoon white sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat Oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the blondies.
  2. Prepare Pan: Spray a 9 x 13 inch casserole or baking dish with cooking spray to prevent sticking.
  3. Mix Sugars and Butter: In a large mixing bowl, whisk together the melted butter, packed brown sugar, and 1 1/2 cups white sugar until combined thoroughly.
  4. Add Wet Ingredients and Spices: Add the eggs, vanilla extract, ground cinnamon, salt, and baking powder to the sugar mixture and mix well ensuring all ingredients are fully incorporated.
  5. Add Flour: Gradually add the all-purpose flour to the wet mixture; the batter will be thick at this point, which is expected.
  6. Incorporate Apples and Walnuts: Fold in the diced apples and optional chopped walnuts; this will slightly thin the batter to a brownie-like consistency.
  7. Transfer to Pan: Spread the batter evenly into the prepared casserole dish to ensure uniform baking.
  8. Add Topping: Combine 1 tablespoon of white sugar with 1/2 teaspoon of ground cinnamon and sprinkle evenly over the top of the batter.
  9. Bake: Place the pan in the preheated oven and bake for 40 to 45 minutes or until the blondies have a firm, brownie-like consistency and a toothpick inserted comes out clean or with moist crumbs.
  10. Cool and Serve: Allow the blondies to cool completely in the pan, then cut into bars. Serve alone or with a scoop of vanilla ice cream for an extra indulgent treat.

Notes

  • Use tart baking apples such as Granny Smith for the best flavor contrast.
  • Walnuts are optional but add a nice crunchy texture to the blondies.
  • Make sure not to overbake to keep the blondies moist and chewy.
  • Store leftover blondies in an airtight container at room temperature for up to 3 days.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
