Ingredients

Scale

Dry Ingredients

  • 4 1/2 cups All-Purpose Flour (plus more for dusting the surface)
  • 1 tablespoon Baking Powder (plus 1 teaspoon)
  • 1 teaspoon Baking Soda
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Cardamom
  • 1/4 teaspoon Ground Cloves

Wet Ingredients

  • 1 cup Butter (Cold, for the dough)
  • 1/2 cup Apple (Grated)
  • 1 cup Buttermilk (Chilled)

Honey Butter Glaze

  • 3 tablespoons Unsalted Butter (Chilled)
  • 3 tablespoons Honey
  • Pinch Salt

Instructions

  1. Prep: Preheat the oven to 425°F (220°C). Prepare your work surface by having extra flour ready for dusting.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, cinnamon, nutmeg, ginger, cardamom, and cloves until well combined.
  3. Cut in Butter and Apple: Add the cold butter and grated apple to the dry ingredients. Use a pastry cutter, fork, or your hands to cut the butter into the mixture until coarse crumbs form and the mixture sticks together when squeezed.
  4. Add Buttermilk: Gently fold in the chilled buttermilk using a rubber spatula until the dough just comes together. It will be sticky.
  5. Prepare Surface: Generously flour a clean work surface and have additional flour ready to dust your hands and the dough frequently to manage stickiness.
  6. Incorporate Dry Bits: Scatter some flour over the dough in the bowl and stir to incorporate any dry patches, as the dough will be wet and sticky.
  7. Knead Dough: Turn the dough out onto the floured surface, dust your hands with flour, and knead lightly a few times until it becomes easier to handle.
  8. Shape and Fold Dough: Pat the dough into an oblong oval shape about 1 inch thick. Fold the short sides towards the middle like an envelope to create layers. Press down and reshape into an oval.
  9. Repeat Folding: Repeat the folding and pressing process a total of 7 times to develop flaky layers.
  10. Cut Biscuits: Using a 3- to 4-inch round cutter, cut the biscuits and place them on an ungreased baking sheet or two round cake pans.
  11. Bake Biscuits: Bake in the preheated oven for 20 minutes, or until golden brown and cooked through.
  12. Make Honey Butter Glaze: While baking, melt the unsalted butter in a medium saucepan over medium heat. Stir in the honey and a pinch of salt until combined and warm.
  13. Glaze Biscuits: When the biscuits come out of the oven, brush them generously with the honey butter glaze to impart shine and sweetness.

Notes

  • Grated apple moisture helps keep biscuits tender; avoid squeezing out the juice.
  • Folding the dough multiple times creates flaky layers similar to laminated dough.
  • If buttermilk is unavailable, use 1 cup milk with 1 tablespoon lemon juice or vinegar left to sit for 5 minutes.
  • Brush biscuits immediately after baking with glaze for best absorption.
  • Biscuits are best enjoyed warm but can be stored in an airtight container for up to 2 days.
